Have you tried making Belgian waffles? I love to give myself plenty of time for breakfast, and with the weekend around the corner, you might also have time for these delicious waffles. All it requires is a waffle iron and of course some ingredients. The waffles are perfect for the weekend table, or as a simple dessert with a dollop of ice cream.
I actually made this recipe for a previous collaboration with Oro Brand. Maybe you know them? They deliver fresh berries to most stores, and now also with a more sustainable design. The recipe was shared on Instagram, but now I also wanted to share it here on the blog.
As I said, Belgian waffles do not require a large shopping list, and you can also easily do without marzipan, which I have added to my dough. I just had that lying around, and the marzipan just made it extra delicious. You also need a waffle iron, so I hope you have that. If not, I can recommend a ‘Snack Collection iron from Tefal’. I’m just linking to Pricerunner, so you can find the cheapest one yourself. I have been SO happy with mine and paid around AED 400 for it.

Ingredients
1 piece. ripe banana – mashed
1 beaten egg
30 g marzipan, grated
70 ml milk
1 tbsp. lemon juice
1 tsp. baking soda
100 g wheat flour
Accessories: A lot of fresh berries, grated lemon peel & icing sugar
Ricotta Mix;
100 grams of Ricotta Cheese
40 grams of Icing Sugar
2 ml Vanilla Essence
HERE’S HOW YOU DO IT
- Mash your banana and mix with the remaining ingredients
- Heat your waffle iron, add a pat of butter, then add a couple of Tbsp. per
- waffle. Close the waffle iron and give them approx. 3-4 minutes. They should be lightly golden
- Slightly whisk the ricotta, icing sugar and essence together. Use it for the waffle accompaniment.
- Serve with berries, sprinkled ice cream, grated lemon peel, or whatever else you want.
