ARAYES
Arayes is a kind of Middle Eastern pita bread or panini, where flatbread is filled with delicious filling and fried. Traditionally, arayes are made with meat filling consisting of mince – but in this recipe, the meat has been replaced with vegetables, spicy tomato dressing and avocado.
Recipe for vegetarian arayes
Arayes are most reminiscent of paninis or enchiladas. In this vegetarian version, flatbread is smeared with a spicy tomato paste with cinnamon, cumin, coriander and paprika. The flatbreads are filled with broad-leaved parsley, tomatoes, red onions, roasted chickpeas and avocado. At home, arayes are eaten as a light lunch, snack or as part of a Middle Eastern menu.
Also, try adding a little grated cheese before baking – it also tastes great.
Ingredients
Tomato dressing
2 tbsp. tomato puree
1 tsp. olive oil
salt
1 tsp. cumin
1 tsp. cilantro
1 tsp. paprika
1/2 tsp. smoked paprika
1/2 tsp. cinnamon
1 dry chilli
Arayes
2 pcs. flatbread (preferably the large ones bought at the greengrocer)
2 pcs. large tomatoes
1 piece. Red onion
1 piece. avocado
1 handful of broad-leaved parsley
roasted chickpeas
Roasted chickpeas
1 can chickpeas (about 240 g cooked chickpeas)
2 tbsp. olive oil
1 tsp. coriander, crushed
2 tsp. cumin
1 tsp. paprika
1/2 tsp. cinnamon
1/2 tsp. smoked paprika
salt
Here’s how you do it
Tomato dressing
Start by stirring all the ingredients for the dressing together. Season with salt.
Arayes
Cut tomatoes and red onions into thin slices. Cut the avocado into smaller pieces and chop the parsley finely. Set it aside.
Roasted chickpeas
Rinse the chickpeas thoroughly. Put oil on a pan and add the chickpeas.
Add all the spices and fry the chickpeas until golden. Remember to stir around so they do not burn on.
Cooking
Grease each flatbread with the tomato dressing. Spread tomatoes, red onion, avocado, parsley and toasted chickpeas on one-half of the flatbread. Fold the other half over. Now bake the flatbread in a panini machine or on a frying pan.
Cut the flatbread into 3 pieces with a sharp knife. Eaten immediately. Bon appetite.
