Chocomisu
Tiramisu means something in the direction of, pull me up and is simply one of my favourites when it comes to dessert. It contains everything a good dessert should: no hot fruit, delicious airy cream, cocoa, and coffee flavor, which together give small drops of heaven. At least it always lifts my spirits! I should definitely share a more Christmas cake, but I actually think this cake can easily be served during December or for the New Year.
This is in my opinion the ultimate cake. It tastes so wonderful and can easily be used as a dessert after a good dinner or for other festive occasions. The cake is enormously rich in flavor and texture, so a small piece is enough to satisfy the sweet tooth.
Ingredients:
250 g dark chocolate, e.g. 85%
150 g butter
5 eggs
100 grams of coconut sugar
½ teaspoon baking powder
1 teaspoon pure vanilla powder
Tiramisu cream:
200 g mascarpone
1 shot espresso or 30 ml strong coffee
3 tablespoons maple syrup, fibre syrup or good honey
Prep:
Melt chocolate and butter together over low heat. Divide the eggs into whites and plums, and beat the whites stiff. Beat egg yolks together with coconut sugar until fluffy. Flip the chocolate mixture in the egg yolks together with baking powder and vanilla. Stir the dough well together and carefully turn the egg whites in. Pour the dough into a springform pan, lined with baking paper, 22 cm.
Bake the cake in the oven at 175 degrees for approx. 30 minutes, or until it is completely baked – make sure that the cake is not baked too much.
Stir all the ingredients for the cream together and taste it depending on how sweet you want your cream. When the cake is completely cold, spread the cream on the cake and decorate with cocoa powder before serving.
TIP: The cake can easily be made the day before and kept refrigerated until it is to be served.
