I love kale and I love feta! The two in combination are wonderful and if you also think these two ingredients are delicious, then you must try this recipe which consists of kale leaves with a salted fat dressing and chopped almonds. The creamy and salty fatty dressing is light, the kale has the crispy element and the almonds give crunch – it works really well together.

Recipe for the best fat dressing for salads
The fat dressing is good for many salads! The sour-salted feta cheese gives some edge to use in both salads but also in dressings as I have done in this recipe.
It is super easy to make the dressing with feta. Simply blend sour cream with feta and then season with lemon, salt and pepper. The dressing has a perfect consistency that is neither too liquid nor firm, and therefore it is perfect to drizzle on salads.

Ingredients
Feta Dressing:
75 g sour cream
40 g feta
salt and freshly ground pepper
0.5 pcs lemon
Pinch of Oregano
50 ml of Salad oil
Salad
4 stalks of kale – sanitized
40 grams of pomegranate
40 g almonds flakes – roasted
50 ml of Feta Dressing
10 grams of feta cheese crumbled
20 grms of Hazelnut chunky
10 ml of lemon juice – to rub the leaves
Prep:
Feta dressing
- Blend sour cream and feta together for a dressing. Season with salt, pepper and lemon juice.
Salad
- Pick the kale from the stems and rinse the leaves thoroughly. Sanitize the leaves and dry it with the salad spinner
- Flip it together with lemon juice and massage it well together.
- Mix all the salad ingredients together and keep a few quantities for the garnishing
- transfer the salad mix into the bowl and drizzle the feta dressing and chunky nuts on top.
