Halloumi fritters with salad are a really wonderful and easy vegetarian dish. Halloumi is a solid cheese, which is also called barbecue cheese. It has a wonderful consistency.
Halloumi fritters are a kind of vegetarian meatballs, which are made from halloumi cheese, onions, sweet potatoes and eggs. At home, I serve the fritters with a fresh broccoli salad with mint. The recipe is enough for 4 people – depending on how hungry you are of course.
Ingredients
200 grams halloumi cheese
200 grams of sweet potato
40 grams of Red onion
4 nos of white egg
1 sprinkle of pepper
1 sprinkle of salt
oil for frying
Broccoli mint salad
1 piece. large broccoli
2 pcs. spring onions
1 large handful of fresh mint
100 g uncooked bulgur (must be boiled)
Dressing:
2 dl sour cream preferably 9-18%
1 tsp. apple cider vinegar
1 tsp. mustard
salt
pepper
1 tsp. sugar
Topping:
25 g roasted pine nuts
Here’s how you do it
Halloumi Fritters
- Roughly grate the halloumi cheese and sweet potato. Finely chop the red onion.
- Mix it in a bowl together with eggs, pepper and salt. Be careful not to salt too much as halloumi cheese is salty in itself. If your dough is too liquid, feel free to add 1-2 tbsp. wheat flour.
- Put some oil on a pan.
- With wet hands, form the dough lightly and place on the pan. Let them cook over medium-high heat until golden on both sides.
- Broccoli mint salad
- Boil bulgur in lightly salted water for about 20 minutes.
- Finely chop the broccoli.
- Cut spring onions into thin slices. Put it in a bowl, along with the broccoli.
- Add the cooled bulgur and mint to the salad. Turn it around.
Dressing
- Stir all the ingredients for the dressing together.
- Pour it over the salad and turn it well.
- Season with salt.
- Serve the halloumi fries warm with salad.
