I’m tempted to make a “Mmhmm… kale, good! Pumpkin good! And good! ”
It sums up my kale salad perfectly, for it combines some of my absolute favorite ingredients. Crispy kale, soft and sweet oven-roasted pumpkin, Chinese spicy duck, juicy pomegranate and a sweet / sour dressing that brings the salad together. I promise you, it works! And then it’s a really rich kale salad, so it can easily make it out for a whole meal.
INGREDIENTS:
1 duck breast
2 tbsp Chinese Five-Spice
20 ml olive oil
600 grams of Butternut Squash
2 large Red Onions in Boats
2 tbsp Olive Oil
1 tsp Cumin
1 tsp Crushed Coriander
1 Allepo Chili
200 grams of peeled kale – Sanitized
1 Nos Pomegranate – Deseeded
50 grms of Feta Cheese Flaky
FOR THE DRESSING:
The Juice of 1 pomegranate
1 tsp Honey
2 tbsp Olive Oil
2 tbsp White Wine Vinegar
1 tbsp Sweet Balsamic Vinegar
A Crooked Lemon Juice
Salt & Pepper
PREP:
- Start by scratching the duck breast fat layer across and the mariners rub it so well with pint and olive oil. Put it in a plastic bag and let it marinate – preferably for a few hours, but half an hour can do that too.
- Make the dressing by stirring all the ingredients together and tasting – it should be sour and sweet at once.
- Rinse and clean the kale thoroughly. Remove the largest stalks and chop the kale finely
- Pour the dressing over and let it stand and pull while you make the duck and pumpkin ready.
- Peel the pumpkin, cut it into medium-sized cubes and cut the red onions into large boats.
- Flip the vegetables together with the cumin, coriander, chili and olive oil and spread them in a layer in a frying pan.
- Bake in the oven at 200 degrees (hot air) for approx. 40 minutes. Stir in it a few times along the way. The pumpkin should be well done and may be soft, but it should still keep its shape.
- Insert second when the pumpkin has been in the oven for 10 minutes. The second must have approx. 30 minutes.
- Let the second rest covered for ten minutes and cut it into thin slices.
- Let the pumpkin and onion cool slightly while the other rests. Mix all the ingredients together and serve.
