Chia porridge is super easy to make and it requires minimal time in the morning. Therefore, it is also an ingenious creation for those periods when you know you are a little extra busy. In addition, it can be varied almost beyond recognition, and for that reason, it often takes a long time before I get tired of the wonderful morning porridge. EASY AND QUICK BREAKFAST WITH CHIA SEEDS
I have no doubt that chia porridge is the world’s easiest breakfast! The porridge is tossed together in the evening and then placed in the fridge overnight. In the morning, just stir in a little skyr or Greek yoghurt and then add your toppings. Easy, not true?
The porridge can be made on milk, on water or on plant drinks. You can also easily make the porridge vegan, for you who are vegan or for you who can not tolerate lactose. Then simply choose a lactose-free yoghurt or soy yoghurt to stir in in the morning.
VARY YOUR TOPPINGS ON YOUR CHIA PORRIDGE
There are endless possibilities to put delicious things on your morning porridge. In the recipe, I suggest one of my favourite combinations of peanut butter, compote, banana and slightly crunchy granola. I use homemade compotes, especially when the different fruits are in season. I myself am completely crazy about compote with apple, rhubarb compote and plum compote.
A combination of peanut butter and apple is also hugely delicious. Or you can combine apple and cinnamon. Or cinnamon, banana and roasted almonds. And I could imagine that a little apple puree or fresh berries could be absolutely amazing too. As mentioned, of course, you can also choose to vary the chia porridge by using different kinds of liquids. I am sometimes quite happy to use coconut milk in the base, and then I top with coconut flakes and a little chopped, dark chocolate.
SOAK THE CHIA SEEDS OVERNIGHT
A portion of overnight porridge is a really wonderful breakfast – of course, a little depending on what you put upstairs. You can also do this with chia seeds, small black seeds that look a bit like birch seeds, are super healthy and contain a huge amount of nutrients. They have a high content of protein and fibre, and then it is one of the easiest ways to get hold of omega 3 fatty acids if now you do not like fish so much, or know you do not eat enough of it.
The smart thing about making an overnight porridge with the chia seeds is that it is actually important to soak the seeds, to gain access to all the good nutrients. So when your chia porridge is standing and pulling in the fridge overnight, then it becomes possible to get all the good out of them. They absorb the good liquid, which is why they get bigger and get the jelly-like consistency.

200 ml milk
5 g agave syrup
¼ tsp vanilla powder
30 g greek yoghurt
GARNISHES:

Sliced banana

PREP:
DAY 1
In a container, stir chia seeds, milk, syrup and vanilla powder together. Stir in it for a few minutes so that the chia seeds can absorb the liquid.
Put the container in the fridge until the next morning
DAY 2
In the morning, stir 2 tablespoons of Greek yoghurt into the chia porridge. Taste it. to with extra syrup.
Pour the chia porridge into a bowl and enjoy it with peanut butter, fruit compote, banana and crispy granola on top.

Chia seeds are not completely cheap but do not use many of them for a chia porridge, as the chia seeds absorb a lot of liquid – so they last a long time. Chia seeds are stuffed with nutritious ingredients. They contain proteins, antioxidants, dietary fibre and omega-3 fatty acids. This is one of the reasons why chia seeds have been hailed as a superfood ingredient.
Chia porridge is a wonderful and filling breakfast that I eat often – especially on busy weekdays. Then I can make it ready the night before. It really only takes 2 min. I usually get the porridge on a jam jar that I can take out of the fridge and eat straight from. A pleasure on busy mornings.
This recipe for chia porridge is quite neutral in taste but with a nice light sweetness from the almond milk. The topping is for me the key to a fantastic chia porridge. Personally, I like to use muesli, fresh berries (frozen can also be used) and nut butter as a topping. It tastes so good!
