Healthy french fries with squash
These squash fritters become crispy from panko crisp and parmesan. You first bread them in eggs, grater and parmesan and then throw the healthy french fries in the oven until they are golden and crispy.
You can serve the healthy squash fritters with parmesan as an accompaniment to chicken, meatballs or falafel. You can also use them as a filling in tortilla pancakes with eg tzatziki and fresh greens. The crispy squash fritters are also delicious to dip in the labneh! You can also use the squash fritters as a filling in homemade sushi or as a vegetarian alternative to tempura prawns – just ready to dip in chilli ranch.
Recipe for squash fritters
My recipe for healthy squash fritters with parmesan is super easy to make. Simply cut the squash into slices, bread them and then into the oven until crisp. It takes no time. You can therefore also easily make squash french fries as a quick snack if you feel like something salty or need a little welcome snack for a dinner party.
Preferably eat the squash fritters hot as they lose some of their crispiness when they get cold.
Ingredients for the batter:
1 egg
2 grams of garlic powder
2 grams of onion powder
25 g wheat flour
1 teaspoon paprika
For the Crumbing:
Panko Bread crumbs – as required
Batter – as required
1 nos Green Squash or Courgette
For Frying:
Sunflower Oil for frying
Final Build-up:
15 g parmesan grated – garnish
A sprinkle of salt and freshly ground pepper
A ramekin of Chilli Ranch
Prep:
- Cut the courgette into sticks and wash it it.
- Dip it in the batter and crumb it with the panko mix.
- Heat the oil into 170 Degree Celsious and fry it for 4 minutes
- After the fry, grate the parmesan on top of the fritters
- Serve it with the Chilli Ranch

How to make easy crispy squash fritters?
Squash fritters are a great way to make healthy french fries in the oven. They are really good and crispy even if they are not made from potatoes. The crispiness comes from the breading with eggs, panko crisp and parmesan. You can use an ordinary rasp, but panko crisp just makes the fritters more delicious, as this type of rasp is in larger flakes.
In principle, you can also skip the breading, but then it will be closer to oven-baked squash than squash fritters.
