INGREDIENTS:
600 ml of water
25 g yeast
1 kg Organic Stone-Ground Wheat Flour
30 g baking enzyme
1 large tablespoon. honey
25 g soft butter
2 tsp. salt
2 gr gluten

- Pour 550 ml of water into a bowl and save the rest of the water.
- Add all the dry ingredients to a bowl. If you use a baking enzyme, it is important that you add it together with the dry ingredients before adding liquid.
- Dissolve the yeast in the water and add the rest of the ingredients.
- Knead the dough in a mixer at the lowest speed for 2-3 minutes, and add the rest of the water as needed.
- The dough should stick a bit. Knead further for approx. 5 minutes. Knead the dough ready for 2 minutes at medium speed.
- Let the dough rise for approx. 15 minutes, then divide it into 2 equal pieces.
- Form 2 loaves, place them on a baking sheet lined with parchment paper and let them rise covered for approx. 60 minutes at room temperature.
Preheat the oven to 240 ° C (hot air 220 ° C). - Scrape the surface with a sharp knife.
- Turn the oven down to 210 ° C (hot air 190 ° C) and bake the loaves for 30-35 minutes until golden. Let the loaves cool on a baking sheet.
- A good tip: You can also make delicious, crispy rolls from this recipe. If you use the same recipe, you get 20-25 beautiful large rolls. The rolls should have 20-25 minutes until golden.
