When the spring sun and the mild heat begin to set in, we spend pretty much all of our time in the garden. I love it! The fresh air and the good space make it so nice to be together. It is best when we have fun with a campfire. As the old scout, I am, I never go out of my way for a good bonfire and some well-baked puff pastry. To be honest – is not snobrød just one of the nicest? I think.
But as with all other baked goods, I really want my puff pastry to taste of something – and not just a dull dough that has been stirred together in a flash and has hardly had time to rise and develop flavour.
Here the answer is once again my sourdough. With my sourdough, I can make the most delicious puff pastry, which you also enjoy eating when you have enjoyed baking them. Puff pastry made with sourdough tastes of so much more – and so much better. The dough is really nice to work with, so you avoid dough everywhere. It is nice!
YOU NEED IT
SOUR DOUGH:
50 g ripe sourdough
50 g water, 29 degrees
50 g fine wheat flour
DOUGH
350 g water, 29 degrees
50 g wholemeal wheat flour
450 g wheat flour
125 g sourdough mix
1 tbsp. sugar
1 tbsp. olive oil
10 g of salt
HERE’S HOW YOU DO IT
Feed your sourdough and leave it to peak and ready to bake.
Put water and flour in a bowl and stir together. Leave it covered for autolysis for 30-60 minutes. Put the sourdough in and stir it into the dough. Add sugar, olive oil and salt and knead the dough until it is smooth, shiny and releases the edges of the bowl. The dough is a little firm – this is the point, as you should be able to handle the dough and put it on a stick the next day.
Put the dough in a bucket greased with a little olive oil. Leave the dough covered and warm until it has risen by 40-50%. It takes 3-4 hours for my dough. Refrigerate the dough until the next day.
The next day a bonfire is made. Remove the dough from the fridge for about 30 minutes before use and divide the dough into 80-100 g portions. Shape each dough portion into a ball by lightly shaping it. Place the dough portions on a plate sprinkled with flour. Let them rest covered until the fire is ready. Put some flour on your hands and shape the dough around the puff pastry stick. Bake over a campfire and enjoy.
